The most exclusive oysters from our selection are born in the Strait of Charente, where they grow for 11 months up to the size of nail. Then the oysters are transported to the Utah Beach (Manche) in Normandy, which is very rich in plankton. Depending on the rate of their growth, the oysters stay there six months to one year. Then they are heading back to the sweeter waters of the Marennes Gulf, between the estuaries of river Charente and Seudre. Here they continue to mature for additional three weeks. The local climate, mild salinity and sea water quality is the best for these oysters. It is precisely at this stage that White Pearls become softer and get the sweetness and nutty flavor that is so typical of these oysters.
