The result from a meticulous work of preparation of the this oyster, their flesh is dense and their colour is pearlier with a rounder shape. Their flavor is sweetened and goes on for a long time in mouth.
This oyster is Creusse family belongs to the highest category of oysters and it is a true pride of growers. It comes from the Marennes Oléron region on the west coast of France, where only a few growers specialize in its production. Final clarification of its flavor takes place in natural water ponds (claires), with the lowest possible density of oysters – up to five pieces per square meter and goes on for four to eight months. This oyster is distinct by a high proportion of hard, crunchy flesh, intensive earthy flavor with a long aftertaste and characteristic sweet aroma. The typical green color of the gills is caused by the presence of algae in the claires during a specific season of the year.
