This oyster has a more pronounced taste than the 'fine' variety. You taste a delicious nutty aroma and the flesh is sweet and crunchy. With this generously fleshed oyster, you taste the appealing transition from brine to acidity with a subtle nutty flavour.
The high flesh percentage is attributable to the orientation of the oyster parks on Utah Beach relative to the wind. As a result, they are exposed to a continuous strong wind. As the amount of wind increases, the oyster's flesh grows proportionally more and the shell grows less.
