The Kys Marine oyster from Normandy is quite special, because this is one of the only oysters in France that are grown in hanging bags. By careful observation of wild oysters, the grower of Kys Marine have invented a system that uses the beneficial effects of the swell and mixing of the waves. The waves knocks the oysters in the bag together. Making the oysters work harder to develop their meat and shell.
Her white shell, the crispness and flavor that is both nutty and iodine-like, is sweet and salt together.
This oyster is in the General Agricultural Competition in February 2011 with a Gold Medal award.
